I escaped Vietnam with my husband and my 10-month old daughter. We spent 5 days at sea sailing to freedom. We arrived at a refugee camp in Malaysia where we waited to be resettled. Every family in the camp received a parcel of food and cooked for themselves. The thing that I can never forget is, that there were no fresh vegetables — just a never-ending supply of dried mung beans. We had no money to buy extra food. So one day I had an idea of how to turn the mung beans into vegetables.

My husband and I got a box and filled it with beach sand, mixed in the beans and added water. After 2 days the mung beans became bean shoots. We were so happy because we could eat bean shoots with instant noodles — very yummy, very cheap and quick to prepare. I still eat them here after 22 years.
